Subject: Email data from selected fields only?

Thanks for a great script. I might have missed this but... If I have, say, 10 form fields (given name; surname; address; country; credit card number, etc.) and I want all of these posted to my (secure) database, can I so arrange it that only some of these fields are sent to me by (non-secure) email (e.g., given name; country). That way, I would know that a form has been posted, but private information (e.g., credit card details) would only be available to me when I logged into the server and would not be sent via insecure mail.
